Japanese Leek & Potato Soup

An surprisingly satisfying healthy dinner, easily whipped up from on-hand ingredients.

For a full meal, provide additional garnishes such as pork belly, fish balls, soft boiled egg, bacon bits, or sliced BBQ pork.

For additional flexibility, you can substitute any aromatic broth such as vegetable, beef, pork, fish, mushroom.

  1. Boil broth, add onion and white parts of the leeks, cook 5 minutes
  2. Add potatoes, cook 10 minutes until starting to soften
  3. Add daikon, cook 5 minutes
  4. Add remaining leeks, cook 5 minutes
  5. Add fresh spinach leaves to bowl, spoon hot soup over
  6. Season with chopped spring onion, Japanese 7 color chili pepper (Shichi-mi tōgarashi) and sesame seeds
  7. For a special treat, add a soft boiled egg cooked in broth

    Easy to make
    Makes way more then for just 2 people!! Which is what I was hoping for but my two handled pot is to the top!!! Not sure on taste since its for tomorrow but I’ll try and remember to update this with the answer!! It sure smells amazing though so I know it will taste delish
