Paprika Tilapia with Passion Fruit Sauce

Lightly marinate any semi-robust whitefish fillet (catfish, tilapia, dory, etc) in sea salt and lime for 20 minutes, season generously with sea salt, black / white pepper and paprika. Sear in butter and olive oil. Mix passionfruit pulp (seeds included) with honey, a few splashes of lime juice, a dash of salt and pepper, and minced cilantro stems. Top with fresh pomelo or pink grapefruit, blanched or fresh diced sweet bell peppers (capsicum), and mint or julienned basil.
