- All Purpose Flour
- 1 cup
- Sourdough Starter (discard)
- 1 tsp
- Salt
- 1 cup
- Olive oil

This came to me as epiphany – a killer way to deal with sourdough starter discard. Solve multiple problems at once. No baking soda needed!
- Mix all ingredients
- Form small balls and allow to rest, covered, for 15 minutes.
- Using plenty of flour, roll out thinly, but not too thinly (too thin tortillas will get crunchy too fast - fine for crackers, though....)
- Cook over medium heat in a dry heavy pan or comal. Press down with a spatula and flip as needed to get even leopard spots.
