Sourdough Tortillas (from Discard)

This came to me as epiphany – a killer way to deal with sourdough starter discard. Solve multiple problems at once. No baking soda needed!

  1. Mix all ingredients
  2. Form small balls and allow to rest, covered, for 15 minutes.
  3. Using plenty of flour, roll out thinly, but not too thinly (too thin tortillas will get crunchy too fast - fine for crackers, though....)
  4. Cook over medium heat in a dry heavy pan or comal. Press down with a spatula and flip as needed to get even leopard spots.
